Trying to get inkcut and Inkscape to work on a Gerber GS750 plus plotter. I love the layout and functionality of Inkscape and Inkcut, as well as the thousands of dollars saved. But I'm having trouble actually getting anything to plot. I'm running it on RS232 type connection that connects to a usbc port in my laptop via a dongle. When I hit send to plotter and do the appropriate actions, the program says the plotter is working even though nothing is happening. I'm so close to getting it to work, and it's time sensitive. Any help greatly appreciated.

Do you have the manual for the machine? I found this www.gerbertechnology.com/downloads/PDF/fastfacts/literature/GS750Plus_Users_Manual.pdf which shows the serial connection is correct.
It sounds like it does not use HPGL (what most cutters use). Try changing the different protocols or it may need a new one.
